Crocodile the creolean way

INGREDIENTS

800 gr crocodile goulash
1/3 green bell pepper cut into cubes
1/3 chopped onion
½ cup sliced ​​white celery
0.25 kg of peeled tomato
1/5 l brown sugar
1 dash of white wine
½ l lime juice
clove
laurel
pepper
salt
Tabasco
English sauce

Melt the butter in the pan and add the bell pepper, onion and celery. Let it stew for 10 min. Season with salt, pepper, bay leaves, cloves and sugar and bring to a boil. Fry the crocodile meat brown, add the vegetable sauce and let it simmer gently for 45 min. Stir occasionally and add a little broth if necessary. Remove from the heat and finish with white wine, lime juice, English sauce and tabasco.
