Crocodile with mashed potatoes

Number of persons: 4

INGREDIENTS

Crocodile
4 stems of hot sauce (to be replaced by spinach)
1 red onion
Potatoes
Butter
Cream
Nutmeg
Pepper and salt

Boil the potatoes and make a smooth puree by adding butter and cream, season with salt, pepper and nutmeg.

 

Remove the stems from the hot sauce. Stew the red onion until translucent and add the chopped hot sauce and let it simmer on a low heat.

 

Season the crocodile with salt and pepper and fry in the butter briefly golden yellow on a heavy fire.
