Bison meat has a slightly sweeter and richer taste than beef, but is a lot healthier. It contains 75% more protein than your average meat, 40% more iron and almost no fat. Bison meat is even leaner than chicken. No wonder the American Heart Foundation praises bison meat as "part of a heart-friendly diet." Due to the delicate structure, it is recommended not to overfry the meat. Buffalo Bill and other Wild West hunters thus referred the bison egg to the eternal hunting grounds. Conservationists and breeders prevented North America's largest land animal from becoming extinct. Thanks to the breeders, the stock has grown considerably (half a million animals in the United States and Canada), that there is room for a new livestock industry and export.
