Our company is proud to work with the best ostrich meat producer of the world (and...they are proud to work with us too). It is very important for us to have top quality fresh ostrich meat with very low bacterial counts. Their are only a few companies that can meet our standards. Deli Ostrich uses ca 800 ostriches /week. The chilled vacuumpacked muscles are transported by air to Europe (Belgium) over the weekend. On monday morning we can start processing with fresh product.

At origin the meat gets 42 days of shelflife. When it arrive at our plant we have minimum 37 days left. A strict hygiene programm + a constantly monitoring of the temperature are the key factors to achieve a high quality product.  During the airtransport we add several electronic temperature loggers to the shipment which are downloaded at arrival. This makes it possible for us to have 100% control on this critical point.
