Serves four

Take
4 crocodile steaks,
1/2 cup of ground pecan nuts,
1 papaya - cubed,
1 mango - cubed,
3 spoons of brown sugar,
1 dash of rum,
1 cup of chicken stock, pepper, salt and curry powder, olive oil

Brown the nuts and the sugar together in olive oil for two minutes.
Then add the sweet mango and papaya.
Mash everything together, stir well and let it reduce with the stock.
Leave the sauce to simmer for a quarter of an hour, but first add a dash of rum.
That is excellent for the flavour.
In the meantime quickly season the steaks with the salt, pepper and curry.
Then fry them. Once the meat has turned a beautiful brown remove it from the pan, then cool it with a little water.
Add the remainder to the simmering sauce.
It is aesthetically pleasing if the plates are first covered with the sauce.
The steaks can be garnished with the remaining pieces of mango, papaya and nuts.
A side dish of couscous seems the most suitable choice to us.
